This recipe takes leftover grilled beef and transforms it into a rich and flavorful stew. The key lies in utilizing the smoky essence of the pre-cooked meat, infusing it with aromatic vegetables and a touch of spice.
Ingredients:
- 1 kilogram grilled beef, chopped into bite-sized pieces
- 1 cup chopped tomatoes
- 1 cup chopped onions
- 2 tablespoons minced garlic
- 1 teaspoon salt
- 3 tablespoons preferred spice blend (such as a blend for stews or curries)
- 2 cups water
- 4 tablespoons vegetable oil
Instructions:
- Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the onions and cook until softened and starting to brown about 5 minutes.
- Stir in the garlic and cook for an additional minute, allowing the fragrance to release.
- Add the chopped tomatoes and cook until they soften and form a slightly thickened sauce, about 5 minutes.
- Add the chopped grilled beef, salt, and spice blend. Toss to coat the beef evenly in the sauce.
- Pour in the water, stir well, and bring to a simmer. Reduce heat, cover the pot, and let the stew simmer for 15-20 minutes, or until the beef is heated through and the flavors have melded.
- Serve hot with your favourite accompaniments such as rice, ugali (cornmeal porridge), or chapati (flatbread).
Tips:
- Feel free to adjust the amount of spice blend to your desired level of heat.
- You can add other vegetables to the stew, such as chopped carrots, bell peppers, or green beans.
- If the stew becomes too thick during simmering, add a little more water to thin it out to your preferred consistency.
